Popcorn rocky road

This classic rocky road is a rich, chocolatey no bake treat that is simple to prepare and perfect for sharing. Made with Kremelta, cocoa, marshmallows and crunchy walnuts, it sets beautifully in the fridge and slices cleanly into bite sized squares. Ideal for parties, lunchboxes or homemade gifts.

Ingredients

  • 100g Kremelta
  • ½ cup cocoa powder
  • ½ cup icing sugar
  • ½ tsp vanilla extract
  • 100g white marshmallows, halved
  • 50g glace cherries, halved
  • 100g caramel popcorn
  • white chocolate for decorating

Method

  1. Line the base and sides of a 15 x 30cm slab tin with baking paper.
  2. Melt the Kremelta in a small saucepan over a low heat.
  3. Combine the cocoa powder, icing sugar and vanilla in a large bowl. Stir in the Kremelta until well combined.
  4. Fold the marshmallows, glace cherries and caramel popcorn into the Kremelta mixture and coat all ingredients well.
  5. Pour the mixture evenly into the lined tin, pressing firmly with hands or the back of a flat spoon. Allow to set in a cool place or refrigerate.
  6. When the rocky road is set, cut into squares with a warm sharp knife and store in an airtight container until required.

Notes: This rocky road is also delicious with addition of walnuts or toasted slithered almonds. Desiccated coconut may also be added.



FAQs

Do I need to refrigerate popcorn rocky road to set?

Yes. Rocky road needs to be refrigerated until firm. This allows the melted Copha to solidify and hold the marshmallows and walnuts together properly.

Why should I not substitute Copha with butter?

Copha is recommended as it sets firmly at room temperature and gives rocky road its classic texture. Butter will produce a softer slice that may not hold its shape as well.

How long does popcorn rocky road last?

Store in an airtight container in the fridge for up to one week. For best texture, allow it to sit at room temperature for a few minutes before serving.

Can I freeze popcorn rocky road?

Yes. Wrap tightly and freeze for up to three months. Thaw in the refrigerator before cutting or serving.

Why is my rocky road crumbly?

If the mixture is too dry, it may not bind properly. Ensure the Copha is fully melted and evenly mixed through the icing sugar and cocoa.

Use low heat to prevent overheating. Copha should be fully melted but not bubbling.

Once the marshmallows are added, mix efficiently so everything is evenly coated before the mixture begins to firm.

Line the tin properly

Use foil or baking paper with overhang to make lifting and cutting easier once set.

Chill until completely firm

Allow enough time in the refrigerator so the slice cuts cleanly into neat squares.

Remove slice from refrigerator before serving

One slice has set, remove from refrigerator at least 30 minutes before serving to allow it to soften slightly and ensure easier cleaner cutting.
